Owners of food businesses are responsible for ensuring that their businesses comply with the Food Hygiene (Wales) Regulations 2006.
These Regulations set out the basic hygiene principles that food businesses must follow in relation to staff, premises and food handling.
Under the Regulations, you must have effective controls necessary to avoid contamination, to ensure that food is produced safely and that the health of your customers and workforce is not put at risk. You must put in place, implement and maintain a food safety management system based on Hazard Analysis and Critical Control Point (HACCP) principles to ensure food produced is safe to eat.
